Pumpkin Spice Pancakes
Ingredients:
1 cup almond flour
1/4 cup pumpkin puree
2 large eggs
1/4 cup milk of your choice
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
Pinch of salt
Coconut oil or butter for cooking
Instructions:
In a medium bowl, whisk together the almond flour, baking powder, pumpkin pie spice, ground cinnamon, and salt.
In another bowl, whisk together the pumpkin puree, eggs, almond milk, maple syrup (if using), and vanilla extract until while combined.
Pour the wet ingredients into the dry ingredients and stir until combined. The batter should be thick, but pourable. If it’s too thick, add more milk to reach the desired consistency.
Heat the non-stick skillet over medium heat and lightly grease the skillet with coconut oil or butter.
Pour about 1/4 cup of batter for each pancake onto the skillet.
Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for an additional 2-3 minutes, or until golden brown and cooked through.
Serve the pancakes with your favorite toppings, such as maple syrup, walnuts, or fresh berries.
